McDonald’s McAloo Tikki is a very iconic burger in India and the price at which it is sold it is absolutely “Value For Money” and it is rely this concept which rely help me to decode the recipe, it sometimes is very hard to figure what is actually in the product but if you look at the wider picture you get to see what you want to see. INGREDIENTS TO MAKE MCALOO TIKKI:

  • 6 Burger Buns (normal ones)
  • 6 Aloo Tikki Patties*
  • Orange Tangy Mayonnaise** (as per requirement)
  • 1 Mid – Size Onion Sliced
  • 1 Mid – Size Tomato Sliced

INGREDIENTS TO MAKE ALOO PATTIES:

  • Boiled Potatoes  –  300 – 325 Gms / 3 mid – Size
  • Rice Flakes or Poha  –  50 Gms / ¾ Cup (make sure you refresh them)
  • Peas  –  ¼ Cup
  • Unsalted Butter  –  2 tsp
  • Aloo Tikki Spice Mix ***
  • Corn Starch Mix ****
  • Batter *****
  • Bread Crumbs
  • Salt  –  ¾ tsp
  • Coriander/Dhaniya Powder  –  ¾ tsp
  • Yellow Chili Powder  –  ¾ tsp / Red Chili Powder  –  ½ tsp
  • Cumin/ Jeera Powder  –  1.5 tsp
  • Turmeric Powder  –  ¼ tsp
  • Garlic Powder  –  ½ tsp
  • Black Pepper Powder  –  ¼ tsp

INGREDIENTS TO MAKE ORANGE TANGY MAYO (5 Tbsps):

  • Mayonnaise – 3 Tbsp.
  • Tomato Ketchup – 2 Tbsp.
  • Paprika Flavored Orange Food Color – 4 Drops

 

INGREDIENTS TO MAKE CORNSTARCH MIX:

  • Cornstarch  –  ¼ Cup
  • Baking Powder  –  ¼ tsp

 

INGREDIENTS TO MAKE BATTER:

  • All Purpose Flour  –  ¼ Cup
  • Cornstarch  –  1/8 Cup
  • Yellow Corn Flour / “Makki ka atta”  –  1/8 Cup
  • Oil  –  2 tsp
  • Salt  –  ¼ tsp
  • Water (Ice Cold)  –  ½ Cup + 2 Tbsp.

 

Key Points:

  • Do not use salted butter
  • Make sure you keep the boiled potatoes unpeeled in the refrigerator
  • Make sure you keep the onions in the water for 2 minutes and then drain them
  • Keep the onions and the tomatoes for 10 minutes in the refrigerator 

NOTE:

Alternative of unsalted butter: canola oil, olive pomace oil, palmolein oil, hydrogenated soybean oil, refined soybean oil, hydrogenated sunflower oil
